Our lemon thyme (Thymus citriodorus) develops intense 1.2% thymol content. Each 100g contains thousands of tiny variegated leaves with pronounced citrus aroma. The harsh growing conditions force production of exceptional volatile oils. Perfect for slow-cooked curries, marinades, and Ayurvedic kadhas. When added to boiling water, the steam helps clear respiratory passages. Harvested at mid-morning when oil content peaks, then shade-dried on cotton nets. Store in UV-protected containers (18-24 months potency). Crush between palms before use to release oils from glandular trichomes. Also makes excellent digestive tea when combined with honey. Farmers intercrop with neem trees for natural pest control. The lemon variety is particularly rich in geraniol and citral compounds.
